Uzbekistan’s soup: Mampar

  • 800 g of beef
  • 2 onions
  • 2 cups of tomato sauce
  • 1 red pepper and 1 green pepper
  • 2 cloves of garlic
  • 2 bay leaves
  • 350gr. of flour
  • 150 ml. water
  • 1 egg
  • coriander, basil, pepper
  • olive oil
  • salt

How to

  1. Cut the beef into strips and chop the onions.
  2. In a saucepan, pour the olive oil and brown the meat, then add the onions and continue to fry.
  3. After 10 minutes, put the peppers already chopped, tomato sauce, pepper and salt. Bring to the boil and add water if necessary.
  4. Mix the flour with water and egg, roll up the dough, brush with oil and cut into small pieces in the soup to boil for ten minutes. Before serving, add the chopped garlic, coriander and basil.
