Uoksas in Kaunas
As labyrintical as the Lithuanian language can be, Uoksas in the city of Kaunas is pretty easy to find, off one of the main streets in town.
Kaunas is the second city of this Baltic state and despite the claims by my friends from Klaipeda, slightly smaller town by the sea, I did not find it provincial nor close-minded.
Certainly a foodie’s judgment may be flawed when he or she has tried the open kitchen at Uoksas.Gastro-bar, fine-dining experience, Uoksas won my heart in the first place with its tender bread and creamy butter balls, while waiting for my main course in its alternative furnished interiors, which according to my experience of the Baltic restaurant business has become more the rule rather than the exception.I picked my starter: seabass tartare, with green pea mousseline, capeline roe.
I love it, entirely, as it was very fresh and a perfect balance brought together by sesame oil.My taste for fresh fish in a beautiful spring afternoon was heading naturally the direction of a red snapper.
With infused fennel.
Butter and wine emulsion.
And burned onion.
Which perhaps does not sound as delicious as it really was, together with a very smooth mayo.
Desserts are a great visual experience too, I had an icecream I will not comment about, since I incurred in the rookie enthustiatic photographer mistake: ran out of batteries. I guess you will have to find out for yourselves.
